Where could I find good on-line English-French glossaries on mining and geology, or unilingual resources in these same fields?

I do not work in your language pair, but if I had a need for such resources I would immediately call the university schools in my country where geology and mining are tought and would ask them for the telephone of their bookshop (most schools have their own shop or an affiliate book seller). The shop might be able to recommend a good bilingual dictionary and/or monolingual dictionaries in both source and target language as a solid starting point.

In specialised translation, your best bet is always to use dictionaries and resources made by scholars and experts. Never trust big multi-topic dictionaries, crowdsourced materials, or glossaries made by non-experts.
