Stunt wont fly / holding water In UK English I have never heard "stunt won't fly".
The Expression "not to hold water" would not work in this context. Although it is going in the right direction, it would not work because "not hold water" is an expression we apply to statements and opinions for example. It would not work if it were applied to an action, such as not paying bills.

True, some more context is required. This is what dictates the tone and slang to best translate the sentence.

trick is past its sell-by date

A "sell-by date" is the term given to the final date given for foodstuffs or perishable items for their safe consumption.

"past the sell-by date" is an ironic/comic way of saying something,or somebody, is too old and does not work well or look good any more. Although more commonly applied to people, it can be used to apply to objects, actions, anything else etc.
