Am cautat in nomenclatorul meseriilor, profesii care nu au disparut definitiv, s-au perpetuat la scara mai mica, fiind inlocuite de prelucrarea industriala; de ex: brânzar, căşar, lăptar, etc. sau pt variatie, aurar...

Second thoughts Perhaps in the context it could also refer to the person who decides on the types of cheese, their names and characteristics.. So maybe it could be translated as 'sortator' in Romanian. I'm guessing it has nothing to do with cheese making, after all.
